Roasted chicken, spaghetti & meatballs, eye of round roast beef…my mouth is watering. Let’s not even go there. These days, my Sundays consist of processing all of my fabulous, local, organic produce into “good eats” for the week. Being prepared with grab and go healthy options is key for success. So what am I going to do with my bounty?
Cooking is not my favorite tasks. This will never be a foodie blog. But, I recognize the value of spending the time in the kitchen to create healthy meals. The time investment on Sunday means less kitchen time during the week. That’s a fair trade-off, I think.
